I have been a butcher for almost 20 years. I have worked mostly in the Hamptons, but I’ve also worked all over. I have traveled to many places in the world, learning different cuts of meat and the techniques used to create them.
My specialty is in South American cuts of meat, but I have extended my knowledge on West Indie, Central American and European cuts of meat also..
